시나브로 익어갑니다Sinabro is a Korean word that describes something developing gradually, almost without noticing.
That idea sits at the heart of how we cook. We ferment, marinate, pickle and prepare from scratch, allowing flavour to develop naturally over time.
Everything starts in an onggi
모든 것은 옹기에서 시작합니다Korean kitchens have fermented in earthenware for generations. The clay is porous, so air moves through the walls while the ferment works.
Inside, almost nothing seems to be happening. Then one day it has.

Vegetables were salted, fermented, and left to develop, allowing them to be enjoyed long after the seasons had changed. Kimchi is one of the traditions that grew from this practice.
Over time, preservation became more than a way of keeping food. Time itself became part of how flavour was made.

Little by little
Sinabro — 시나브로 — is a Korean word for something that changes gradually, so slowly you only notice once it has already happened.
It is an old word, and a quiet one. We chose it because it describes the part of cooking nobody sees.
Soybeans sit in an onggi jar through the cold months. Cabbage salts overnight and ferments for weeks. A marinade is made three days before it is needed. None of it looks like much while it is happening.
What arrives at the table is simple. A bowl, a plate, a few things on it. The work is behind that, in the time it took.
We make our ferments, pickles and sauces here, in this kitchen, the way they have always been made. Not because it is unusual, but because it is how the flavour gets there.
